Dinner is in the oven.....

I came home this afternoon mildly happy but very hungry. The hungry could be handled, and will be soon....

Here's the plan.

In a big cast iron dutch oven I melted half a stick of butter. In went a large sweet onion, diced in bigish chunks. Next, a fist sized chunk of roast beef, also diced large. All this was sauteed till browned a bit, then a cup of Basmati rice was stirred in and allowed to brown as well.

Add two tablespoons of fairly warm Cajun seasoning and a few cups of water, then stir in a grande size grab of parsley and some kosher salt. Stir it all up, bring to a boil, lid, then shove it into a 325 degree oven for the next hour or so.

When it's done I'll plate it with some Crystal hot sauce and shredded cheddar.

Can you smell it cooking? HMMmmmmm...........

On the school front... we have us a thief. Some meters went awol, and we is not happy campers. It's going to change the complexion of how we teach the class, as there is no way we can reliably pin down the culprit. Things will be done differently from now on.... as we have carefully explained to our young charges over the course of the last few days. We had time, as the shop has been mostly dark and cold..... while they stared longingly out the theory room windows.

On the plus side, that gave us time for more theory lessons! They should be well prepared for tomorrows five page test on basic vehicle electrical systems.

I approached our single best student today about going out on an API apprentice position. This would mean spending one or two school days each week on the job in a training slot. His reply surprised me, even though he's not the first I have heard it from. He wants to stay in class instead, to learn everything he can. After that, he's thinking about aircraft mechanics school, going for an A+P and Avionics certification.

Bright, bright boy........
