Real men DO eat quiche

Ok, maybe we call it ham and eggs pie, but it's still good man-chow.

Sauteed apple smoked ham, caramelized Vidalia onions, slices of Jarlsburg swiss cheese, real cream, fresh ground black pepper, a dash of nutmeg...

Call it what you will.

I call it dinner.

Simple man-chow quiche:

Dice half a sweet onion and saute in a pat of butter. Sprinkle with a pinch of kosher salt and a few grinds of black pepper.

When the onion is starting to caramelize, drop in a large handful of diced smoked ham (your choice, but I like apple wood smoked). Bacon works a treat too.

Cook the ham till it starts to brown as well, then divide evenly between two thawed pre-made pie shells. Lay on slices of good quality Swiss cheese, enough to make a loose layer.

In a mixing bowl, blend eight jumbo eggs with half a cup of cream. Mix in black pepper to taste, and a half teaspoon of fresh ground nutmeg. No more salt is needed, as the ham brings its own to the party.

Pour the egg mixture over the ham, onions, and cheese, evenly split between the two pie pans. Sprinkle with shredded cheddar cheese if you wish, or some crumbled bacon if you have it.

Bake in a 375 degree oven for about an hour, or till GBD on top. (Golden brown and delicious).

Remove from the oven and allow to rest, covered with foil, for about fifteen minutes or till you can't stand it anymore.

Eat.

I'm going to the kitchen. You made me hungry. The Slim Jim and water you had awhile back didn't provoke a response except pity.
